Truffles Australis and its group have had 18 years experience in the truffle industry in Australia and have done a lot of practical research on tree varieties that are best suited to our climate. With over 10,000 hazelnut trees and 25,000 oaks under Tim Terry's management, some being as old as 12 years of age the results have been staggering comparing the yields for the different species of tree. Based on experience and results Truffles Australis would strongly recommend that oaks are the preferred species for truffle production. Yields are way higher, initial setup costs are lower and management is easier. After attempting to produce commercial quantities of truffles on hazelnuts trees (purchased from another supplier) for 14 years Mr Terry is now replacing them all with oaks, so actions speak louder than words here! In fact Truffles Australis have ceased production of hazelnut trees for truffle production from their nurseries

We use two main varieties, Quercus ilex and Quercus Robur
to produce the black truffle Tuber melanosporum.

Tuber Aestivum (summer truffle)
We also offer the choice for growers to plant oak trees infected with Tuber Aestivum (summer truffle) this truffle is probably best suited to colder climates and grows in such places as France, Italy, England and Sweden, so it is very diverse. Whilst its value is not as high as melanosporum it is generally easier to grow. Tim Terry grew the first ones in Australia in November 2005 from under 5 year old inoculated oaks.
